The aging cellar at Verdots Vineyard is a masterpiece born from an ambitious endeavor in the early 1990s. Over five years of meticulous excavation through solid rock, this 600 m² subterranean space was crafted to cradle 200 barrels — a sanctuary where our wines mature in perfect harmony with their terroir.
A Stunning Renovation in 2024
In 2024, the cellar underwent a stunning renovation, designed to showcase the geological richness of the estate. Thoughtfully placed openings allow visitors to admire the intricate interplay of rocks that shape the very essence of the vineyard.
The Verdots River – Heart of the Terroir
Beneath the surface lies a hidden marvel: the Verdots River, the lifeblood of the terroir, quietly weaving beneath the cellar. Its gentle flow, visible through grates in the floor, brings together the natural forces — earth, stone, and water — that define our wines. This unique convergence infuses every barrel with the authentic character of the estate, creating wines deeply rooted in their origins.
The Journey of Our Wine
The journey of our wine begins with the meticulous harvesting of grapes, carefully transported to the winery to preserve their integrity. Over the years, the facilities have been modernized to ensure the production of exceptional wines that reflect the purity of the fruit and the unique character of our terroir.
The vinification process unfolds through several carefully orchestrated stages: the gentle transport of the harvest via conveyor belt, fermentation in truncated cone-shaped tanks, and precise punching down, with gravity-assisted techniques minimizing unnecessary trituration.
Following vinification, the wine enters its maturation phase in our subterranean aging cellar, where rigorously controlled temperature and humidity create ideal conditions. After aging and blending, the wine undergoes delicate filtration before bottling. Each bottle is then placed on galvanized steel pallets of 600 bottles, stored in the cellar to continue its evolution under optimal conditions.

Barrel Selection and Maturation
Barrel selection plays a pivotal role in the maturation and aging of our wines. We collaborate with five master coopers, each bringing unique expertise and passion to this timeless craft.
These artisans distinguish themselves through their choice of wood species, the origin of the timber, the careful selection of staves, and the precision of toasting techniques. The individual character of each barrel imparts distinct qualities and energy to the wine, enhancing its complexity, depth, and balance.
